Instructions

Instructions are for four portions. Modify as necessary.

    Zucchini fries

  1. Pre-heat the oven up to 400F (200C).

  2. Cut the zucchini in half, and then cut into wedges. Put them into a bowl and drizzle them with avocado oil and then mix gently to cover.

  3. Sprinkle on the Parmesan cheese along with paprika powder, onion powder, salt, and pepper. Toss gently until all of the zucchini fries are coated with seasoning.

  4. Place the food in the air fryer and cook for 12-14 minutes, until golden, turning halfway.

  5. Yogurt dip

  6. In a small bowl, mix in a small bowl, the Greek yogurt, scallions chopped along with parsley and onion powder. Add the salt as well as pepper.

  7. Refrigerate and cover until you are ready to serve.

  8. The zucchini fries are served with a dip served on the side.

Tips

Change the spices! You can try garlic powder. a bit of cayenne, as well as Italian seasoning.

Are you looking for a vegan alternative? Try nutritional yeast in place of Parmesan cheese and substitute the sugar-free marinara sauce to make yogurt dip.

Oven method

Preheat the oven until 425F (220C). Follow the recipe to Step 3 and bake the bread in the oven for 20 minutes.
